This old outbuilding, once part of the Benedictine priory in Tholey, was originally a farmhouse. Now it is a temple to regional gastronomy. The 5th-generation descendent of the founder of the restaurant in 1871, Stephan Schneider, has not forgotten its historical, family or local roots. Sarreguemines faïence has pride of place here. You’ll see it first on the superb reception desk. Beyond that, mirrors, stoves and tableware create a colourful collection that is a delight to the eyes. The floral names of the 11 bedrooms filled with antique furniture also conjure up images of the locally made glazed earthenware. Most of the rooms overlook the lush green grounds where there is a superb terrace. Inside, they combine old stonework with antique furniture, works of art and absolute comfort. The fragrances of days gone by add their touch to a cuisine steeped in country traditions. The family orchard and garden provide the fruit and vegetables, brandies and homemade jam, as well as the “Danish” pastries and pork meat products. The chef carefully selects animals on the hoof (milk-fed veal, organic lamb etc.) and turns them into mouthwatering dishes.
Cuisine
Using the freshest seasonal produce is a precept upheld at Saint Walfrid. Asparagus, organic vegetables or vegetables from the home garden, fish (from coastal fishing) and local snails (from Burgundy) all make a contribution to its success. Goat and hare à la royale are on the a la carte menu and the “home flavour” menus, gourmet inspiration to “delight the senses without terrifying the scales”. Our cuisine has been rewarded by one Michelin star!
